Match-Up Meal Idea!

If you are looking for a quick fix for a delicious meal this weekend you may want to try this. Doritos and Salad Mixes are both BOGO this week at Publix and match up with this meal.

Take one bag of lettuce blend and pour into a big bowl, add crushed Ranch Doritos chips to your liking, add 1 can of seasoned black beans, next add 1/2 cup of salsa and drizzle ranch dressing to your liking and toss. You can also add other items to your liking (think peppers, onions, tomatoes, seasoned beef, etc.). Enjoy!

Match Up Meal- Vodka Primavera

I love the Vodka spaghetti sauce from Bertolli. It has a sweet yet creamy taste and it is always a hit with everyone. I was looking for a new way to use it since it was BOGO at Publix and I found a great recipe. Let me know if you try it, I would love to hear your comments!

VODKA PRIMAVERA

  • Serves 6

  • cook time: 15 minute(s)
Ingredients

1 Tbsp. Olive Oil
2 cloves finely chopped garlic
3 cups assorted vegtables cut (zucchinni, squash, mushrooms, peppers would work nicely)
1 Jar Bertolli Vodka Sauce
1/4 cup Parmesan Cheese
1 16oz. box of linguinie, cooked and drained


1 Tbsp. Bertolli® Classico™ Olive Oil
2 cloves garlic, finely chopped
3 cups assorted cut-up fresh vegetables (zucchini, yellow squash, broccoli, bell peppers, carrots, asparagus and/or mushrooms)
1 jar Bertolli® Vodka Sauce made with Fresh Cream
1/4 cup grated Parmesan cheese
1 box (16 oz.) linguine, cooked and drained
Directions:
  • Heat Olive Oil in 12-inch nonstick skillet over medium-high heat and cook garlic 30 seconds. Add vegetables and cook, stirring occasionally, 4 minutes or until vegetables are crisp tender. Stir in Sauce and bring to a boil over high heat. Reduce heat to low and simmer, stirring occasionally, 5 minutes. Stir in cheese. Toss with hot linguine and serve, if desired, with chopped fresh basil and additional cheese.

Quick Appetizer Recipe for your Weekend Getaway-Match-up for Publix

This Recipe is great poolside or for a quick afternoon snack. It is a great match-up meal for the current Publix ad. Ritz are BOGO and Black Forest ham is on Sale in the deli. You could substitute and use the Havarti cheese that is on Sale as well. This recipe makes 6 sandwiches so I would double it. Let me know what you think.

12 RITZ Crackers
  •  2 slices Shaved Brown Sugar Ham, cut into thirds

  •   1 oz. KRAFT Colby & Monterey Jack Cheese, cut into 6 thin slices

  •   6 thin slices Kosher Dill Pickles

  •  2 tsp. Spicy Brown Mustard


  • Instructions
    1. TOP 6 of the crackers evenly with ham, cheese, pickles and mustard. Cover each with second cracker to make sandwich.
    2. PLACE in single layer on microwaveable plate.
    3. MICROWAVE on HIGH 10 sec. or until cheese begins to melt.
    Enjoy!

    Match-Up Meals! Recipie Ideas for your Stock Up Items

    As I said before, one of the main goals of this blog is to share recipe ideas that match-up with the deals you have gotten recently or can get this week. I know it is a common statement among my couponing friends that sometimes you stock up on items because they are Free or close to Free and then you are not quite sure how to put them together to make a meal. Match-Up Meals will be a frequent post I will do in order to help out with this dilemma.

    Today I am going to share my "Taco Pie". This is a dish I started making a few years back with what I had on hand and it has become a favorite in our family. It seems every time I serve this I always get requests for the recipe. If you are like me and you shop at Publix then you probably have a good stock of the Mexican meal kits. This meal is perfect for putting these to use and you can adjust it to include what you have and what you like. Its a great variation from the typical taco.

    What you Will Need:
    Soft Taco Shells
    Taco Sauce
    Browned Hamburger meat seasoned with Taco Seasoning and diced onion(optional)
    Mexican flavored Rice (if you like)
    Cheddar Cheese
    Refried Beans(if you like)
    Queso Cheese Dip or Nacho Cheese


    You will need a large glass lasagna size pan. I spread a very thin layer of taco sauce on the bottom to help the shells stay moist. Next I add a layer of the taco shells (they will overlap and depending on the size of the shell you will use 2 to 3 of them), if you are using refried beans then you will spread them over the shells now(if not then I recommend a layer of cheese dip in order to preserve moisture), next add a layer of the hamburger meat followed by a layer of shredded cheese next a layer of rice (if you choose) and then the nacho cheese and repeat. Top with a layer of shredded cheese. Bake at 350 degrees until warmed through and bubbly (20-30 minutes). I cover with foil until the last 5-10 minutes. Some like to top with a dollop of sour cream when serving.

    You can do many variations of this and add ingredients to your liking. The possiblities are endless. Also, try preserving the taco meat from taco night the week before and freeze for use in this recipie to skip a step and speed up preperation.
